4 quarts biscuit crumbs
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon sage
1 cup chopped onion
4+ cups of turkey drippings

Directions:
Directions:
Crumble biscuits into coarse crumbs (you can use a food
processor, but make sure the crumbs are coarse, not fine).
In a large container, combine the crumbs, salt, pepper, sage
and chopped onion. Let it set for several hours to allow the
biscuit crumbs to absorb the flavor of the seasonings and
onion.

When ready to cook, pour turkey drippings over the crumb
mixture until thoroughly moistened. Sometimes more than 4
cups is needed, but avoid “drowning” the bread or the
dressing will be soggy.

The secret to light, fluffy dressing lies in this step: DO NOT
STIR IN THE LIQUID, BUT VERY GENTLY TOSS THE
CRUMBS AS YOU WOULD TOSS A DELICATE SALAD.
Gently, as though handling beaten egg whites, place the
tossed, moistened crumb mixture into a 9” x 13” glass baking
dish.

Bake at 350ºF until the top of the dressing is nicely browned,
and it is steaming hot. This usually takes about 35 to 45
minutes. Serve immediately. Yield: 8 to 10 servings. (The
amount of this recipe can be adjusted up or down by adjusting
seasonings proportionally to crumbs.)
