1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tbsp. baking powder
2 tsp. cinnamon
1/2 c. walnuts
powdered sugar

Filling:
1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
4 tbsp. margarine
1/2 tsp. vanilla

Beat three (3) eggs on high for five (5) minutes with 1 cup of sugar. Stir together 2/3 cup pumpkin and 1 teaspoon lemon juice add to the eggs and blend. Stir together 3/4 c. flour, 1 tbsp. baking powder, and 2 tsp. cinnamon; fold into pumpkin and egg. Spread into greased 15x10 inch pan, and top with 1/2 c. chopped walnuts. Bake for 15 minutes at 375 degrees. Turn onto a clean dish towel covered with powdered sugar, and roll cake inside the towel to cool into a cake roll shape. Make filling. Unroll the cake from the towel and gently spread with filling, then re-roll the cake, slice and serve.
