1/4 lb butter or margarine
1/2 cup sugar
1 teaspoon lemon rind
2 eggs, separated
1 cup flour
1 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cup apricot jam
1/2 cup sugar
1/2 cup chopped nuts

Directions:
Directions:
Combing the butter and 1/4 cup sugar. Add 2 egg yolks, one at a time, beating well after each addition. In a separate bowl mix together the flour, salt and baking soda. Add the flour mixture to the rest of the ingredients.

Spread the dough in a greased 2 quart pyrex pan.

Cover with apricot jam. If you want you can add 2 tablespoons of orange marmalade to the jam.

Beat the 2 egg whites to stiff peaks adding 1/4 cup sugar gradually. Fold in 1/2 cup chopped nuts. Spread meringue on jam. Bake at 350º for
45 minutes.

Let the pan cool and then cut into squares. Sprinkle with confectioners sugar when done.
