3/4 cup matzo meal
1 teaspoon salt
1/2 teaspoon sugar

Directions:
Directions:
Beat whites until stiff. Beat in egg yolks. Fold in matzo meal and the rest of the dry ingredients by hand. Let it stand until firm enough to roll into balls. Wet your hands lightly, make balls and drop into boiling water. Bring back to a boil and cook covered for 45 minutes.

If you double the recipe, you get about 24 good size matzo balls. Do not do more than double the recipe, it just doesn't work well.
