-Pork butt - cut into bite size pieces and marinated with salt, pepper, a little soy sauce and egg white for 2-3 hour or overnight.

-equal amounts of flour and cornstarch mixed together (2 cups of each).
-3 tbsps baking powder (maybe a little more to make pop).
-Cold water
-2 tbsps oil
-2 tsps salt

Sweet and Sour Sauce Ingredients:
-1 small can of chunk pineapple including juice
-few drops of sesame oil
-1 tbsp of ketchup - for color
-3 tbsps brown sugar
-3 tbsps apple cider vinegar
-1 cup chicken broth
-1 small diced green pepper
-worcheshire sauce - for taste
-3-4 tsps cornstarch - to thicken (mix with cold chicken broth)
-chopped scallion greens

1. Marinate pork or shrimp.

2. Make Sweet and Sour Sauce by mixing all ingredients in a sauce pan except for the cornstarch and scallions. Bring to a boil and add a small amount of cornstarch mixture (cornstarch and chicken broth) to sauce until thickened. Add chopped scallions.

3. To make pork or shrimp:
-mix flour, cornstarch, baking powder with small amount of cold water - keep thick.
-add 2 tbsps oil into the mix.

4. Heat cooking oil in wok or large sauce pan.

5. Dip piece of pork or shrimp into batter then into hot corn oil. Cook until it floats on top of oil. Test for doneness and adjust cooking time.

6. Serve with Sweet and Sour Sauce over white jasmine rice.
