2 boneless skinless chicken breasts
1/2 cup pearl barley
5 cups chicken stock
1 stalk celery, chopped
2 medium carrots chopped
2 medium tomatoes chopped (or 1 small can of chopped tomatoes)
1 medium onion chopped
1 clove garlic mashed
1 teaspoon dried basil
fresh pepper to taste

Directions:
Directions:
Toss all ingredients into a stock pot. Bring to boil, cover loosely & simmer for about 1 hour and 15 minutes until
barley and chicken are cooked. Remove chicken and cut into bite-sized pieces, when done, return it to the pot.

You can't ruin this dish. The ratio of barley to chicken stock affects whether the recipe turns out more like stew or like soup. If you find the soup to be too thick, more chicken stock can be added at any time.
