2 (16 ounce) cans tomatoes, cut up
1 (15-1/2 ounce) can red kidney beans
1 (15 ounce) Great Northern beans
1 (15 ounce) can garbanzo beans
3 medium onions, chopped (about 1-1/2 cups)
1 medium zucchini, halved lengthwise and sliced
1/2 cup water
2 cloves garlic, minced
2 teaspoons chili powder
1/2 teaspoons dried basil, crushed
1/4 teaspoon pepper
1 bay leaf
1 cup cashews (optional)

1. Combine all ingredients except nuts in a large Dutch oven. Bring to a boil over high heat. Reduce heat, cover and simmer for 1 hour. Sprinkle with nuts and serve.
