2 (1/4-ounce) envelopes dry yeast
1/2 cup warm water
2 tbsps. butter
3 tbsps. sugar
1 1/4 cups milk
4 1/2 to 5 cups all-purpose flour
1 1/2 tsp. salt

Directions:
Directions:
Combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes. Combine butter, sugar, milk and salt in a heavy saucepan and cook over medium heat, stirring constantly, just until butter melts. Pour into a large bowl and cool. Stir in yeast mixture; gradually stir in enough flour to make a soft dough. Turn dough onto a floured surface and knead until smooth and elastic (about 5 minutes). Place in a well-greased bowl, turning to grease top. Cover and let stand in a warm place, free from drafts for 15 minutes. Divide dough in half and shape each portion into 12 balls and place in 2 greased 9-inch square pans. Cover and let rise in a warm place, free from drafts for 15 minutes. Bake at 425° for 10 to 12 minutes. Yields: 2 dozen.
