-corn oil
-1lb. mei fun rice noodles (noodles must be softened in hot water for approx. 1 minute before adding to wok)
-6 eggs - cook as omelet in wok then cut into small pieces.
-celery - 1 bunch - cut into 1" matchsticks
-scallions - 1 bunch - cut into 1" matchsticks
-1 clove garlic - minced
-salt and fresh ground black pepper
-1/4 cup chicken broth
-3-6 tbsp.soy sauce, to taste
-spice salt, to taste
-roast pork, cooked chicken, shrimp - any or all can be added
-bean sprouts - optional

1. In hot oil in wok----
-add salt
-add minced garlic and celery.
-stir fry 3-4 minutes. Remove from pan.
(repeat with chicken, if uncooked). Wash wok between each use to prevent sticking.

2. In hot oil in wok----
-add salt
-add minced garlic and add rice noodles.
-Stir constantly for 2 minutes. (Cooking tongs work best for turning noodles).
-add celery - stir 1 minute
-add 1/4 cup chicken broth - stir 1 minute
*****-at this point add bean sprouts if using - stir for 1 minute.
-add soy sauce to taste
-add spice salt to taste
-add meat, chicken, shrimp - stir 1 min.
-add egg - stir 1 minute
-add scallion - stir 1 minute
-add ground black pepper - stir until done - approx. 1 minute.
