3 tbsp olive oil
1 large red bell pepper seeded and chopped
1 large yellow onion
2 celery stalks chopped
1 rounded tbsp chili powder
1 &
1&1/2 tbsp cumin
1 tbsp paprika
3 tsp oregano
1/2 tsp cayenne
3 large tomatoes chopped, or about 1&1/2 c chopped canned tomatoes
3 c cooked red beans
3 c cooked black beans (or 6 c of one kind)
1&1/2 c water

Directions:
Directions:
Heat olive oil in large pot, on medium-low heat, add bell pepper, onion, celery, garlic, chili powder, cumin, paprika, oregano, and cayenne. Saute until vegetables are softened but not browned, about 8-10 minutes. Stir in the tomatoes, beans, and water stirring occasionally, until chili has slightly thickened and the flavors are well blended, about 30 minutes. If chili is too thick you may add about 1/4 c of water.©
