1 pkg. vanilla cake mix (yellow or white)
1/2 c. butter, melted
1 large egg yolk
4 large eggs
1 T. grated lime zest
1 can sweetened condensed milk
2/3 c. lime juice

Directions:
Directions:
Preheat oven to 350º. Move rack to center of oven. Spray a 9x13" pan. Save 1 T. cake mix.
Beat cake mix, melted butter, and 1 egg yolk for 1-2 minutes. Pres mixture into bottom of prepared pan. Bake 15 minutes.
Beat or whisk together the eggs, milk, lime juice, and 1 T. of reserved cake mix until smooth. Stir in lime zest.
Spread carefully over the warm base layer. Bake 20-25 minutes until topping is set and brown. Cool on rack.
Refrigerate at least 2 hours before serving.
Yield: 24 bars.
