8 medium potatoes, thinly sliced
1 medium red or white onion, thinly sliced in rings


Sauce:
1/2 c. butter
1/2 c. all purpose flour
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
4 1/2 c. milk

additional paprika, generous sprinkle

Directions:
Directions:
Place potato slices in one container and onion slices in another.

Sauce: Melt butter in saucepan. Mix in flour, salt, pepper and paprika. Stir in milk until it boils and thickens.

To assemble, layer 1/2 potatoes, then 1/2 onion in greased 3 quart casserole. Pour 1/2 sauce over top. Layer remaining potatoes, onion and sauce. Sprinkle with paprika. Bake covered in 350º F oven for about 1 hour until tender. Remove cover for last 10 minutes.
