3 graham cracker crusts

2 (14 oz.) cans sweetened condensed milk
16 oz. Cool Whip
2 (8 oz.) cream cheese

1 bag coconut
2 cans chopped pecans

1 squeeze bottle caramel syrup (ice cream topping)

Lightly toast pecans and coconut in oven. Cool and set aside.

In mixer, beat cream cheese and condensed milk until smooth. Fold in Cool Whip until mixed well.

Fill each crust half full with mixture; sprinkle with nuts and coconut. Drizzle syrup. Repeat, spreading with remaining mixture and sprinkle remaining nuts and coconut. Drizzle syrup on top. Freeze.

Remove from freezer 20 minutes before serving.
(This pie is very rich, and you may want to go light on the nuts, coconut and syrup.)


You can use this recipe to make a variety of pies. I like to add fresh chopped strawberries with a small amount of drained, crushed pineapple. (Omit nuts, coconut and syrup.)
