1 c. shortening
2 c. brown sugar
3 eggs
2 tbsp. cold water
4 c. flour
1 t. soda
1 t. vanilla
salt to taste

Filling:
1 c. raisins
1 c. sugar
1 c. water
1 tbsp. flour

Directions:
Directions:
Blend shortening, sugar, and eggs. Add water and vanilla. Add dry ingredients. Roll onto floured surface and cut using round cookie cutter. Place cookies on parchment lined cookie sheets. Boil together filling ingredients and cool. Drop by teaspoon onto cookies and top with a second cookie. Pinch edges. With knife, make small slit in top cookie. Sprinkle with granulated sugar. Bake at 375º for 10 to 12 minutes.
