- 1 cup - chopped dates
- 1 tsp - baking soda
- 1 cup - hot water
- 1/4 cup - butter
- 1 egg - beaten
- 1 cup - granulated sugar
- 1 tsp - vanilla
- 1 1/2 cups - all purpose flour
- 1 tsp - baking powder
- 1/2 tsp - salt

Icing
- 3 tbsp - butter
- 5 tbsp - brown sugar
- 2 tbsp - whipping cream
- 3/4 cup - finely shredded coconut

Directions:
Directions:
Preheat oven 350º F

- Mix the dates, baking soda, and hot water together, set aside
- cream butter, egg, sugar and vanilla, mix with date mixture
- combine flour, baking powder, and salt
- slowly add four mixture to date mixture
- pour mixture into 9 x 9 pan
- bake for 40 mins
- remove from oven and lower temp to 325º F

- combine icing ingredients
- spread over cake
- put cake back in oven and brown the icing slightly for approximately 10 - 15 minutes
