Tortellini Salad Recipe

1 lb. tortellini, dry or frozen
1 small can mushrooms
1 can artichoke hearts
1 stick pepperoni
2 T. dry mint
Green olives
Black olives
Red onion
Salad peppers
Italian dressing

1. Cook tortellini according to directions.
2. Meanwhile, drain mushrooms, olives and artichokes. Chop desired amount of vegetables and pepperoni into small pieces.
3. Drain tortellini, rinse well and add to vegetables.
4. Pour Italian dressing onto salad and crumble mint on top. Mix well.
Chill at least 5 hours or overnight.
