2 medium onions
2 tsp olive oil
6 chicken thighs
1/2 tsp salt
3 cloves garlic, minced
1 1/2 tsp. thyme
3 bay leaves
2 Tbsp. flour
1 cup white wine
1/2 cup chicken broth
2 Tbsp. tomato paste
1/2 tsp pepper

Thinly slice the onions. In a large skillet, over medium high heat, brown the chicken in the oil, about 10 minutes. Remove chicken to a plate, cover and keep warm. Pour off all but 1 Tbsp of fat from skillet. Add the onions, garlic, thyme and bay leaves. stir fry until the onions brown. Sprinkle the flour over the onion mixture, and cook for 1 minute, until the flour is no longer visible. Add the wine, chicken broth, and tomato paste and bring to a boil, stirring constantly. Return the chicken and any accumulated juices to the skillet. Return to a boil, then reduce the heat to low, cover and simmer until the chicken is cooked through, about 20 minutes. Halfway through, turn the chicken over. Remove the bay leaves before serving.
