Aunt Jean's Strudel Recipe

Dough:
3 cups sifted flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. sugar
3/4 c. (12 T.) butter or margarine
1 egg yolk
1/2 c. milk
1/2 tsp. vanilla

Top of strudel:
Egg white
Shredded coconut

Filling:
Any type pie filling (cherry, apple, peach, blueberry, lemon, strawberry)

Directions:
Directions:
Preheat oven to 350ºF.
1. Mix together flour, baking powder, salt and sugar. Mix as you would for pie dough.
2. Beat in egg yolk, milk, and vanilla. Again, mix as you would for pie dough.
3. Divide the dough in half. Roll out one half to fit a cookie sheet with edges; be sure to leave enough dough to come up the edges to hold the filling.
4. Spread filling over dough.
5. Roll out the other half of dough and layer on top of the filling, pinching all around the edges to hold in the filling.
6. Brush egg white on top of strudel and sprinkle with sugar and shredded coconut.
7. Bake at 350ºF for 25 to 30 minutes.
