Dough:
3 eggs
1 c. sugar
2/3 c. plain pumpkin
3/4 c. flour
1 tsp. cinnamon
1 tsp. baking powder

Filling:
1 c. powdered sugar
4 tsp. butter
6 oz. cream cheese
1/2 tsp. vanilla
Cream together and set aside.

Directions:

Preheat oven to 350ºF.
1. Beat eggs with sugar for 5 minutes.
2. Add pumpkin, flour, cinnamon, and baking powder.
3. Grease and flour wax paper on a cookie sheet with a one-inch edge. Spread dough in a medium thin layer and bake at 350ºF for 15 to 20 minutes. Then immediately turn onto dish towel and roll lengthwise. Cool one hour.
4. Unroll and spread with filling.
5. Re-roll in wax paper and refrigerate.
