14 oz. minute rice, cooked
1/2 stick butter
2, 8 oz. cream cheese
24 eggs
2 (+) cups raisins
2 qts. milk
3 cups sugar
2 T. vanilla
Rind of lemon

Directions:
Directions:
Preheat oven to 325°F.
1. Cook rice and add butter and cream cheese until melted and mix well.
2. Beat eggs and add to mixture.
3. In saucepan, add raisins to milk and scald; add to mixture.
4. Add sugar, vanilla, and little bit of lemon rind and mix well.
5. Pour into greased Pyrex dishes and sprinkle with cinnamon.
6. Bake at 325ºF for 50 to 60 minutes or until a knife in the center comes out clean.

Be careful not to burn the milk. Adding the raisins to the milk while scalding will make them plump. You can add more raisins if you like.
