12 slices bacon in 1 inch pieces 1 lg onion chopped 1 cup sliced carrots 2 cloves minced garlic 1/2 cup dry white wine (Riesling) 1/4 cup packed brown sugar 1/4 cup white wine vinegar 1/2 tsp salt 1/2 tsp pepper 1 head cabbage, red or green or combo of both shredded 3 apples cored and cubed, (I use granny smith and Macintosh) 6 smoked pork chops 1 polska kielbasa

In lg pan cook bacon till crisp remove from pan and set aside to drain on paper towels. Leave fat in pan and add onions, carrots and cook for 5 mins. add garlic stirring so garlic doesn't burn. Add wine, brown sugar, vinegar, salt and pepper, mix well stirring up the browned bits from bottom of pan. Add cabbage,apple and bacon, bring to a boil and cook for 25 minutes. Remove cabbage mixture to heated platter and place in warm oven while you brown up sausage and chops, smoked porkchops are like ham, they have been cured so all you need to do is brown them up in the same pan as the sausage. When done, arrange chops and kielbasa on top of cabbage mixture. Add some buttered noodles on the side and enjoy!!

This is a Pennsylvania Dutch dish my Great Grammy made alot. She also served applesauce,(homemade of course) on the side. It's just the right mix of sweet and sour.
