1 1/2 lbs lean ground beef 1/2 lbs ground pork 1/2 lb ground veal 3 eggs 1 1/2 Tbsp worchestershire 1 cup minced onion 1/4 cup chili sauce 1/4 cup ketchup 1/2 cup minced celery 1 Tbsp minced garlic 3/4 cups dry plain bread crumbs 2 tsp each salt and ground black pepper 2 cups shredded cheddar cheese 1 1lb bacon.

Preheat oven to 350º
Mix all ingrediants together well, handle lightly, don't overwork. Form a free form loaf and place on jelly roll pan. Cover completely with sliced bacon, keeps meat loaf moist and imparts a smokey flavor. Bake for 1 hr, carefully drain grease, place bak in oven for another 45 to 60 mins. Let set for 10 mins before slicing. Serve with oven roasted taters, onions and carrots chunked up and drizzled with olive oil and salt and pepper.

This makes wonderful sandwiches the next day, or buy some gravy mix and make hot meatloaf sans with mashed taters and steamed peas.. Yum Yum
