Veggie Chili Recipe

1 can refried beans
1 can pinto beans
1 can kidney beans
2 cans diced Italian style tomatoes
2 cans tomato sauce
2 cups grated cheddar cheese
1 diced (large pieces) onion
1 tray sliced mushrooms
1 tsp diced garlic
3 tbsp olive oil
chili powder
cayenne pepper

Put olive oil, onions and garlic in pot on medium heat. Brown onions.
Add in all other ingredients.
Season with chili powder and cayenne pepper. Add a tsp at a time and season to your taste - stop when taste good!
Let chili simmer for 1 hour, then serve over rice.
Add grated cheese and onions on top for "Zippys" effect!
