2 lbs. of potatoes, cooked and mashed
2 cups radishes, diced small
2 cups celery, diced small
4 hard boiled eggs, chopped

Dressing:
2 eggs
1 c. water
1/2 c. white vinegar
6 T. sugar
1 T. butter
1/2 tsp. salt
1/4 tsp. pepper
1 T. mustard
1 T. cornstarch

Directions:
Directions:
Mix potatoes, radishes, celery, and hard boiled eggs in a large bowl.
Dressing:
Beat eggs and add water, vinegar, sugar, butter, salt, pepper, and mustard. Cook and stir until it comes to a boil, and then thicken with cornstarch dissolved in water. Pour over potato mixture and stir. Refrigerate before serving.
