1/2 to 3/4 c. bulgur wheat #1
4 bunches parsley, washed, stemmed and chopped
3 to 6 large tomatoes, chopped
1 to 2 bunches green onions, chopped or 1 medium onion, chopped fine
1/2 to 1 c. lemon juice
1/2 c. fresh mint, chopped or 1/4 cup dried mint
1/4 c. vegetable or olive oil
Salt and pepper to taste

Directions:
1. Wash wheat and place in a bowl. Cover wheat with water and soak for 30 minutes or until soft.
2. Combine all fresh ingredients and herbs in a large salad bowl.
3. When wheat is soft, drain and squeeze the water from it. Add wheat to the salad.
4. Pour in oil and lemon juice. Add salt and pepper to taste. Toss well and serve.
