three eggs [ may vary}
2 cups or so of all purpose flour
one half cup of canola oil

Directions:
Directions:
slice egg plant into even slices at desired thickness
crack eggs into large bowl and beat throughly with a fork.put flour into a large bowl. dip sliced egg plant in egg then roll in flour. heat oil in a large skillet and fry egg plant until golden brown.
