2 ducks
oil
salt, pepper, and caraway seed
2 onions, cut in half

Directions:
Directions:
Preheat oven to 400º.
Put oil on hands and oil duck all over. Salt, pepper, and sprinkle caraway seed inside and out. Place breast side up in roasting pan with shallow amount of water. Do not put on rack. Roast for 1 hour. Turn down to 350º, draining off fat and water. Replace shallow amount of water and roast for 2 1/2 hours with 2 onions cut in half.
Serve with saurkraut and potato dumplings.
