1 pkg. dry yeast
1/4 cup water
1/2 cup hot mashed potatoes
1/4 cup shortening
1/4 cup sugar
1 1/2 tsp. salt
1 cup milk, scalded
1 egg
4 to 4 1/2 cups all purpose flour

Directions:
Directions:
Preheat oven to 400º
Soften yeast in warm water. Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm.
Add softened yeast and egg. Stir in 1/2 cup of the flour; beat well. Stir in remaining flour. Knead till smooth (6-8 min).
Place in greased bowl to rise (1 hour)
Punch down. Shape in ball, cover, let rest (10 min).
Shape into 2 dozen rolls on cookie sheet. Let rise (1 hour).
Bake in oven 10-12 minutes
