Ingredients: 1/2 LB. Bacon Milk 1 C. or more 3 T. Flour Salt & Pepper to taste Iron Skillet 9 inch Wire Whisk

Directions:Fry Bacon in an iron skillet. Take bacon out and keep the grease hot. Keep the temperature of the stove at Med. If you bacon has a lot of grease you might need to take some out of the pan. There should be about 4 T. of grease in the skillet. Slowing add flour & 1/2 tsp. salt to grease using a whisk. The grease will become like a paste. Watch it because it will start turning color. You do want it to become a light to Medium brown. Keep stirring all the time. Then pour 1/2 of milk into the hot grease & flour using the whisk. It will get thick right away so you will have to add more milk as it cooks. Keep adding milk until it becomes a gravy consistency. Taste to see if you need more salt. Add a little pepper to taste.Then lower the stove to simmer. You keep cooking this while you make your eggs and the biscuits are baking. Keep watching it all the time and add a little milk if it gets too thick. Serve this over biscuits. |

Notes: This is a southern dish. Great Grandma Goatley made this and passed it down to my mom and then to me. Uncle Del Fox likes it with sausage instead of bacon. And he mixes the sausage into the gravy. Don't give up if you don't get it right the first time. It takes practice to learn.
