1 large Ham Bone
4 qts water
1 1/2-2 lbs Ham cut in 1/2" cubes
6 - 8 potatoes peeled and diced
2 large onions
4 stocks celery with leaves
3/4 cup chopped parsley
1 bay leaf
1/4 tsp. Oregano
1 clove garlic minced
pepper to taste
2 Tbs oil
6 hard boiled eggs cut in quarters
1 batch dumplings (See dumpling recipe)

In large pot saute 1 diced onion, 2 diced celery stalks with leaves and garlic in 2 tbsp. olive oil. Add ham, bone, bay leaf, pepper and orgeano. Add water. Bring to a boil. Reduce heat to a low simmer, cover and cook 3 to 4 hours. Remove bone.increase heat to medium high until boiling.
Add cubed potatoes, 2 more stalks diced celery and one more large diced onion. Cook until the potatoes are tender. Add dumplings and cook 5 to 10 minutes until dumplings are tender. Drop in quartered hard boiled eggs. Serve in bowls garnished with chopped parsley.
