4 slices bacon
2 cloves garlic
1/4 c. olive oil
1 bunch broccoli, separated into small flowerets
1/2 c. water
1/2 c. raisins
1/2 tsp. salt
1/2 tsp. crushed red pepper flakes
1 medium ripe tomato, diced
1/3 c. sliced almonds

Cut bacon slices into 1/2 inch pieces. Place in large skillet and cook over medium heat until golden brown, stirring frequently with a wooden spoon. Drain and remove from skillet. Set aside. Pour off bacon fat from skillet, reserving 1 tbsp. Return to skillet and add olive oil and garlic cloves. Saute until garlic is golden brown, stirring constantly. Remove garlic and discard. Add broccoli to skillet along with water, raisins, salt, and red pepper flakes. Cover and cook 5 minutes. Remove cover and cook for another 2 minutes or until broccoli is tender. Add tomatoes, sliced almonds, and reserved bacon pieces. Toss gently to combine. Tomatoes should be warm, but not cooked. Serve immediately.
