2/3 c.dates
1 c. Shortening
1 1/2 c. flour
3/4 c. milk
1 c. Brown Sugar
1 t. salt
1 1/2 c. sugar
2 beaten eggs
1 t. baking soda
1 T. butter
1 t. vanilla
3 c. Oatmeal
1/2 c. nuts
1/2 c. coconut

Directions:
Directions:
Cook dates, milk, ½ c. sugar, and butter until thick. Set aside. While above is cooling, cream together shortening, 1 c. sugar & 1 c. brown sugar. Add eggs and vanilla. Mix well. Mix together flour, salt, baking soda. Add to creamed mixture. Mix well. Add oatmeal, nuts, and coconut. Mix well. Shape into 2 or 3 rolls. Open each roll & fill with date mixture. Press back into roll and chill thoroughly. Slice & place on greased cookie sheet. Bake 10 minutes at 375 degrees.
Yield: 5 Dozen.
