Caramel and Almond Cookies Recipe

12 graham crackers
2 cups miniature marshmallows
3/4 cup butter
3/4 cup packed brown sugar
1 tsp ground cinnamon
1 tsp vanilla
1 cup sliced almonds
1 cup coconut

Line a 15 in. by 10 in. x 1 in. pan with foil. Place graham crackers in pan. Cover with marshmallows. In a saucepan over medium heat, cook and stir butter, brown sugar, and cinnamon until the butter is melted and sugar is dissolved. Remove from heat; stir in vanilla. Spoon over the marshmallows. Sprinkle with almonds and coconut. Bake at 350 F for 14-16 minutes until browned. Cool completely. Cut into 12 inch squares; then cut each square in half to form triangles.
Yield: 6 dozen.
Variations: Add chocolate chips if you want to make these cookies for a chocolate lover! Makes a great holiday cookie exchange or as gifts.

Think what a better world it would be if we all, the whole world, had cookies and milk about three o'clock every afternoon and then lay down on our blankets for a nap.
