1 (8 oz.) jar dried tomatoes in oil, undrained
1 small onion, chopped
2 garlic cloves, minced
4 boneless skinless chicken breasts, cut into strips
3 tbsp. fresh basil, chopped or 1 tbsp. dried basil
1 c. fat free half-and-half
1/2 tsp. salt
1/4 tsp. pepper
6 oz. fettuccine, cooked

Drain tomatoes, reserving 1/4 c. oil; coarsely chop tomatoes. Saute onion and garlic in 2 tbsp. reserved tomato oil over medium-high heat until tender. Add chicken, and cook,stirring occasionally, 6 minutes or until chicken is done. Add tomato and basil, and cook, stirring occasionally, 2 minutes. Stir in remaining 2 tbsp. tomato oil, half-and-half, salt, and pepper. Toss with hot cooked pasta.
