2 T unsalted butter, softened
2 T canola oil
1/3 c light brown sugar
1/4 c applesauce
1 egg white
1 t vanilla
2/3 c whole wheat pastry flour
1/2 c oatmeal
1/4 t salt
1/4 t ground cinnamon
1/4 c chopped dried cherries
1/4 c chopped dried apricots
1/4 c lightly toasted walnuts
2 oz dark chocolate, cut into chunks

Directions:
Preheat oven to 375º. Combine butter, oil and brown sugar and mix with mixer on high until light and fluffy, about 2 minutes. Add applesauce, egg white, and vanilla and mix until just combined. Add cherries, apricots, walnuts, and chocolate and mix to combine.
Spray baking sheet with cooking spray. Take 1 tablespoon on dough, roll in ball, and place balls 2" apart on baking sheet. Press cookies down with the palm of your hand to flatten slightly. Bake for 12 to 14 minutes, or until lightly browned but soft. Remove from oven and cool on racks.
