2 pkg. 8 oz. cream cheese, room temperature
12 sliced (about 3/4 lb.) hickory smoked bacon
3-4 tbsp. well-drained prepared white horseradish
1/2 tsp. freshly ground pepper
About 12 ribs of celery, trimmed and cut into 3" lengths

Cook bacon until crisp, drain and crumble.

In a medium bowl, beat the cream cheese with a wooden spoon until it is fluffy. Stir in the bacon, 3 tbsp. of the horseradish and the pepper. Taste for seasoning and add the remaining tbsp. of horseradish if desired.

Using about 1 tbsp. of the filling for each, stuff the pieces of celery, slightly mounding the filling. Refrigerate until the cheese has set, about 1 hour. Cover with plastic wrap and refrigerate until shortly before serving.
