3 ripe mangos, peeled and diced
1 med. cucumber, diced
1 orange, peeled and diced
1 kiwi, peeled and diced
3 green onions, finely chopped
parsley (optional)
1 ½ tsp. ginger root, minced
2 T. orange juice
2 T. lime juice
1 T. olive oil
Salt and pepper, to taste

Mix ingredients together. Cover and refrigerate. Let it all soak together at least 20 minutes. Don't prepare more than 4 hours in advance.
