2 whole chicken breasts, skinned, boned and cut into 1 inch pieces
2 T. lime juice
1 recipe spicy seasoning (recipe below) or 1 T Mexican Seasoning
1 (16 oz.) can stewed tomatoes ( mexican style)
2 T. sugar
1 1/2 tsp. cornstarch
1 (4 oz) can diced green chili peppers, drained
1 clove garlic, minced or 1/4 tsp garlic powder
Corn chips, nacho chips or corn tortillas, sour cream, olives, lettuce, shredded cheese, chopped tomatoes or whatever you might want to add.

Spicy Seasoning:
1/2 tsp. corn meal
1/2 tsp. paprika
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. ground cumin
1/4 tsp. dried oregano, crushed
1/4 tsp. ground red pepper

Rinse chicken and pat dry. Arrange chicken in an 8 inch square microwave-safe dish. Sprinkle with lime juice and the Spicy Seasoning or Mexican seasoning. Cover with vented plastic wrap or lid.
Microwave at 100 % power for 8-10 minutes or until chicken is tender and no longer pink. Stir to rearrange once or twice during cooking time. Keep warm while preparing sauce.
In 4 cup glass measure, stir together undrained tomatoes, chili peppers, sugar, cornstarch and garlic. Cook, uncovered, at 100% power for 4-5 minutes or until hot. Pour tomato sauce over chicken and stir together. Serve chicken and sauce over corn chips or corn tortillas. Top with cheese, lettuce, sour cream, olives, etc.

It looks like a long recipe but it is super easy. I mix larger amounts of the Spicy Seasoning and keep it in a small container to have on hand.
