Ingredients: 2 whole chicken breasts, skinned, boned and cut into 1 inch pieces 2 T. lime juice 1 recipe spicy seasoning (recipe below) or 1 T Mexican Seasoning 1 (16 oz.) can stewed tomatoes ( mexican style) 2 T. sugar 1 1/2 tsp. cornstarch 1 (4 oz) can diced green chili peppers, drained 1 clove garlic, minced or 1/4 tsp garlic powder Corn chips, nacho chips or corn tortillas, sour cream, olives, lettuce, shredded cheese, chopped tomatoes or whatever you might want to add.
Spicy Seasoning: 1/2 tsp. corn meal 1/2 tsp. paprika 1/4 tsp. salt 1/4 tsp. garlic powder 1/4 tsp. ground cumin 1/4 tsp. dried oregano, crushed 1/4 tsp. ground red pepper

Directions:Rinse chicken and pat dry. Arrange chicken in an 8 inch square microwave-safe dish. Sprinkle with lime juice and the Spicy Seasoning or Mexican seasoning. Cover with vented plastic wrap or lid. Microwave at 100 % power for 8-10 minutes or until chicken is tender and no longer pink. Stir to rearrange once or twice during cooking time. Keep warm while preparing sauce. In 4 cup glass measure, stir together undrained tomatoes, chili peppers, sugar, cornstarch and garlic. Cook, uncovered, at 100% power for 4-5 minutes or until hot. Pour tomato sauce over chicken and stir together. Serve chicken and sauce over corn chips or corn tortillas. Top with cheese, lettuce, sour cream, olives, etc. |

Notes: It looks like a long recipe but it is super easy. I mix larger amounts of the Spicy Seasoning and keep it in a small container to have on hand.
