1/2 cup butter
1/4 cup flour
2 cups milk
1/2 cup cheese (optional)

Directions:
Directions:
Make sauce first. Melt butter in sauce pan then add flour and stir until smooth. Slowly add the milk and continue to stir till smooth. Remove from heat and add cheese.

Potatoes can be prepared ahead of time and soaked in water to prevent darkening. Slice potatoes in thin slices.

Place potatoes in large casserole dish and add sauce. Mix till potatoes are coated. Bake in oven for 1 1/2 hours at 350 º
