1 - 10 oz jar of apricot preserves
1/4 c lemon juice
2 tsp soy sauce
1 c dry break crumbs (plain not seasoned)
1/4 c melted margarine
3 lbs of chicken pieces

Directions:
Directions:
Preheat oven to 350º. In shallow dish, combine apricot preserves, lemon juice, and soy sauce--mix well. In a second shallow dish, place the bread crumbs. Coat each chicken piece with the preserve mixture, roll in the crumbs, and then place in a greased 9 x 13 pan or casserole dish. After all the chicken pieces are arranged, drizzle with melted margarine. Bake approximately one hour or until tender. Serve with rice.

You can use chicken breasts cut in half or you can use chicken thighs or legs. This is a good dish to make ahead.
