12 eggs
½ C. milk
½ C. flour
1 tsp baking powder
1 ¾ C. cottage cheese
12 oz cheese, shredded
Chopped vegetables and/or cooked meats
(raw mushrooms, green onions, ham, sausage, bacon)

¼ C. butter (I just spray the pan with Pam and leave out the butter)

Beat eggs; add milk, flour, baking powder and beat again. Stir in cottage cheese and cheese. Add vegetables and meat of your choice.

Melt butter in a 9 x 13 baking dish. Pour in egg mixture and bake at 350 for 40 – 45 minutes or until slightly browned and puffy. Serve immediately.

This is good with plain artichoke hearts, olives and a little onion used in place of other vegetables and meat.

It’s also good as chili eggs. Add one can of diced green chilies instead of the vegetables and meat. Simple and tasty!

Can be made the night before and refrigerated.
