8 oz sour cream
2 c chicken cooked & cubed ( about 3 or 4 skinless chicken breasts)
2 8oz pkg Colby/jack cheese shredded
16 oz salsa
2 tbsp parsley flakes dried
8 tortillas
may want lettuce, tomato, and extra sour cream to top the enchilada's when serving

Directions:
Directions:
Mix 8oz sour cream, 1 8oz pkg cheese, 1/4 c salsa, parsley, and chicken. Spoon mixture in tortillas and roll up. Fill a cake pan. Pour remaining salsa over tortillas. Bake 350º 25min. Sprinkle remaining cheese over top and bake an extra 5min. Garnish
