1/2 c. shortening
1 c. sugar
2 eggs + 1 egg yolk
1 1/2 c. flour
1 tsp. baking powder
1 c. shredded coconut
1/2 tsp. vanilla OR lemon extract

FROSTING:
1/2 c. light brown sugar
1 egg white
3/4 c. finely chopped nuts

Directions:
Directions:
Cream shortening and sugar; add beaten eggs and yolk. Add sifted dry ingredients, vanilla and coconut. Spread thinly over greased 10 x 14" pan, and frost.

FROSTING:
Fold brown sugar into stiffly beaten egg white. Spread on cake batter and sprinkle with finely chopped nuts. Bake for 20 minutes at 325º. Cut in squares while warm; let cool before removing from pan.
