6 garlic cloves, coarsely chopped
1/2 t. sea salt
1 - 1 inch slice of country-style bread - crusts removed
3 T. olive oil
3 T. boiling water
1 T. fresh lemon juice

Directions:
Directions:
Tear bread into chunks and place them in a bowl. Cover with warm water, then squeeze the bread as dry as you can.

Put garlic and salt in blender and work until chopped very fine. Add the bread to the garlic. Whirl. Now put in olive oil 1 T. at a time, then the boiling water, also 1 T. at a time with blender on. Add the lemon juice. You should have a smooth, thick paste. Serve in a bowl to accompany Souvalaki Sandwiches. This makes about 1/2 cup.
