2 1/2 cups cake flour (plain)
1/2 tsp. salt
1 tsp. baking soda
1 cup Crisco or Wesson oil
1 1/2 cups sugar
2 eggs
1 oz. red food coloring
1 tsp. vanilla
1 cup buttermilk
1 tsp. white vinegar

Icing:
1 box powdered sugar
1 stick margarine
1 8 oz. pkg. cream cheese, softened
1 tsp. vanilla
1/2 cup pecans
1/2 cup coconut

Directions:
Directions:
Sift together the flour, salt and soda. Set aside.

Cream oil and sugar. Add eggs and beat. Add vanilla and vinegar. Beat in milk, flour and food coloring.

Bake in 3 9" round pans for 25 minutes at 350º.

Mix together all icing ingredients. Do not frost cake until it is cool.

The first time I made this as a teenager, the cake fell apart. Mom had me piece it back together and ice it anyway. Although it resembled Stone Mountain, it was very good!
