2 tbsp. veg oil
4 (1in. thick) boneless pork chops
1 1/2 cups sliced onion, separated into rings
1 cup beef broth
1 tbsp chopped parsley
1 tsp paprika
1 tsp prepared mustard
1/2 tsp salt
1/2 tsp ground black pepper
1 cup sour cream

In large skillet, heat oil over med/hi heat. Add pork chops and cook for 2 min per side until browned. Place onion evenly over chops. In small bowl, combine broth, parsley, paprika, mustard, salt, and pepper. Cover, reduce heat to med/lo and simmer for 11/2 hours. Stir in sour cream, and cook for 3-4 min until heated through. Do not let boil. Serve over hot rice. Garnish with parsley if desired.
