4 (5 oz.) boneless, skinless chicken breasts, 1 (16 oz.) jar of chunky salsa, 1 can of black olives (drained), 1/2 tsp. of chopped garlic, 1/2 onion (chopped), 1 tomato (diced), 1 (16 oz.) can of black beans, 1/2 cup of grated cheddar cheese

1. Beat the chicken breasts to uniform thickness
2. Spray frying pan with PAM
3. Saute garlic and onions over low heat
4. Add the chicken and cook until golden brown, turn once
5. Add salsa, beans, and tomato and cover.
6. Continue to cook over low heat for 30 minutes
7. Top with olives and cheese
** Tastes great when served over rice**
