1 lb. American Cheese (Velveeta), 3/4 c. butter or margarine, 2-16 oz. bags frozen vegetable blend containing broccoli, cauliflower, and carrots (thawed and drained), 1 c. (about 30) crushed butter crackers

Directions:
Directions:
Cut cheese into cubes and place in saucepan with 1/2 c. butter. Heat over medium heat until melted and smooth, stirring often. Place vegetables in a 8x8 casserole dish. Pour cheese mixture over vegetables and mix well. Melt remaining butter. Stir in cracker crumbs. Sprinkle over top of casserole. Bake, uncovered, at 350º for 20-25 minutes. Serve at once.
