2 c old-fashioned oats
1/2 c wheat germ
2 Tbsp dark brown sugar
1/4 tsp salt
1/4 c almonds
1/4 c sunflower seeds
2 Tbsp flax seeds
1/4 c pecan pieces
1/4 c pumpkin seeds
1/4 c pine nuts
1/4 c maple syrup
3 Tbsp flavorless oil, such as vegetable or canola
1 Tbsp water
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp vanilla
diced dried fruit if desired

Preheat oven to 275º. Adjust rack to middle of oven. Grease 9 x 13 baking pan with spray or wipe with canola oil and set aside. Mix dry ingredients and brown sugar in a bowl. Bring syrup, oil, water and spices to a simmer in a saucepan over low heat. Drizzle over oat mixture, and stir to combine. Pour mixture onto prepared pan. Working a handful at a time, squeeze cereal to form small clumps or press into pan like a slab. Bake for 45 minutes. Let cool.

If adding fruit, cook for 30 min. Stir in fruit. Bake 15 minutes longer. Let cool.
