Ingredients: 1-1/2 C. Ritz Cracker Crumbs 1 Stick of butter 1 Large fresh broccoli steamed or boiled (you can use frozen broccoli 2 10 oz. packages) 1/2 slivered almonds CHEESE SAUCE 4 T. butter or margarine 3 T. Fours 1 tsp. salt 1 Jar of Old English cheese (5oz) 1 C. milk

Directions:Bake 400º for 15 min. 8X8 square pan. I usually double this recipes but I do not double the sauce.
Mix Ritz cracker crumbs with 1 stick of butter. I put the butter in the casserole in the oven to melt, or I use the micro wave to melt it. Reserve 3/4 cup crumbs for topping. Put the rest in the greased casserole dish. Add Broccoli over the crumbs. Place cheese sauce over the broccoli, layer on remaining crumbs and top with almonds. DIRECTION FOR SAUCE Melt butter in a 4 C. measuring cup in the microwave. Then add flour salt and stir up. Add milk to the mixture in the 4 C. measuring cup and stir. Add to microwave and cook on high for 2 -3 Minutes. If it is thick and blended together add the jar of cheese and put back in microwave for 1 min. to melt cheese. This is a easy way to make any sauce. (if you don't have a microwave you can cook it on the stove. Making a white sauce with butter, flour, milk and salt. Then when thick add the cheese. |

Notes: I started making this in Toledo, OH before we moved to Georgia. Great dish to take to church potluck. The Old English cheese in the small jar is the reason it is so good. When you find the cheese in your store, buy several at a time. They seem to be hard to find.
